They’re an ideal choice for granola, baked oats, veggie patties – or simply for those who prefer their porridge with a bit more bite. They take a bit longer to cook, but every spoonful is worth the wait.

Recipe Ideas

Mushroom & Asparagus “Oatto” – Italian-Style Savoury Oats (for 2)

A creamy, hearty twist on risotto – made with oats. Comforting, satisfying, and packed with flavour.

Ingredients:

  • 150–200 g of mixed mushrooms per person (e.g. shiitake, champignons, beech mushrooms)
  • 120 g oats (60 g per person)
  • 100–150 g asparagus, cut (green or white, or mixed)
  • 20 g butter (or vegan alternative)
  • 4 garlic cloves, minced
  • 250 ml vegetable or chicken stock per person (keep it hot!)
  • 1 dl coconut milk
  • 30 ml dry white wine per person (optional, but adds depth)
  • 40–50 g grated cheese (mozzarella or parmesan – 2/3 stirred in, 1/3 for topping)
  • Black pepper (freshly ground), Himalayan salt, garlic powder
  • Optional: a pinch of saffron per person for that extra golden touch ✨

Instructions:

  1. Heat a pot on medium and melt the butter.

  2. Add the minced garlic and sauté until fragrant.

  3. Add the mushrooms and asparagus (cut into various shapes for visual variety). Sauté for 3–5 minutes until the mushrooms release their liquid.

  4. Pour in the hot stock and coconut milk. Season with garlic powder, Himalayan salt, and freshly ground black pepper. Add the wine and saffron, if using.

  5. When the liquid starts to bubble again, stir in the oats. Let everything simmer gently for 8–10 minutes, stirring occasionally, until it becomes creamy and thick.

  6. Once the oats are soft and the texture is just right, stir in 2/3 of the grated cheese until fully melted and silky.

  7. Plate it up and sprinkle the remaining cheese on top while hot — it will melt slightly and add that extra umami kick.

Serve warm, enjoy deeply. You just made oatto magic.🌾
